Boardroom Deli: Fresh and fast

Edwards mainstay makes breakfast and lunch delicious and plentiful

Hot sandwiches, cold sandwiches, for-here sandwiches and to-go sandwiches — Boardroom Market & Deli in The Riverwalk at Edwards is here to take your river trip or mountain excursion to the next level.

Specializing in to-go deli sandwiches — both breakfast and lunch — Boardroom will customize your sandwich, wrap it for the river and, if you order online, you can simply come in, grab it and go on your way.

“We do so much in the summer, especially with all of the activities going on — rafting, fishing, biking, boating — all that stuff is just huge with our clientele,” said Brad Trumpower, who opened Boardroom five years ago after extensive experience in local restaurants.



The menu is fun at Boardroom. With names like Pepi’s Face Meatball, Rose Bowl Shrimp, Lodgepole BLT, Red Buffalo Chicken Wrap and Steep & Deep Roast Beef — the sandwiches pay homage to local ski areas and trails.

The most popular summer sandwich is the Riva Ridge Italian, a nod to the 10th Mountain Division and 4-mile ski trail on Vail Mountain. The Riva Ridge Italian comes loaded with capicola, roasted ham and genoa salami, with provolone cheese, lettuce, tomato and onion, topped with extra virgin olive oil, red wine vinegar and oregano — all on French bread. (Hot peppers are available upon request.)

“It’s funny, I’ll be out on the river fishing and all of a sudden I’ll say, ‘I know that sandwich,'” Trumpower said of happily seeing his sandwiches being enjoyed out in nature by others.

Trumpower grew up in Ocean City, Maryland, and went to college at Colorado State University before planting his roots in the Vail Valley. He worked as a golf pro during the summers and a chef in the winters before opening Boardroom five years ago.

“Just kind of bringing that East Coast-style sub-sandwiches and that style of food out here,” he said. “I thought it was a huge niche and needed.”

In addition to the sandwiches, Boardroom also offers breakfast burritos, fresh salads and soups. All soups and dressings are made in-house, as is the turkey and roast beef.

While many people are coming to Boardroom to grab-and-go, there is an inviting dining area where you can watch surf and snowboarding videos while you enjoy your breakfast or lunch.

“Five years in, everything’s great,” Trumpower said. “The local following has been amazing, especially here in The Riverwalk.”

Located in Edwards, Boardroom is helping feed hikers, bikers, rafters and kids playing in tournaments at the nearby fields.

Their catering options make it easy to feed a small army — like a lacrosse team.

Inside, there is a sign with John Muir’s quote, “The mountains are calling and I must go.” It should be updated to say: “The mountains are calling and I am heading out with my lunch from Boardroom” – or something like that.
