Paul and Crystal Klees, the owners of Mary’s Mountain Cookies in Granby, opened their cookie gondola at Winter Park Resort right after receiving a long-term mobile vending permit from the Winter Park Town Council on Jan. 3.
The Klees opened Mary’s Mountain Cookies in July, and even before opening the Granby store, the Klees had the idea to open a cookie gondola in Winter Park.
In a phone interview, Paul explained they purchased a used gondola cart from The Gondola Shop in Fruita and prepared the gondola to be a suitable place to sell cookies.
The Klees purchased a gondola built-out to sell coffee in the summer. They had to renovate the gondola to make it warmer, given Winter Park’s cold climate.
Originally, the gondola had operational doors and an open concept. The Klees got rid of the doors, enclosed the gondola, and insulated the space. Klees said they added a plexiglass window in the front to keep heat in and added some cool lights.
