Drinks with a view at the Vail Valley’s newest bar
One Rooftop Bar now open at Riverfront Village in Avon
Rooftop bars are all the craze across the nation, from the high-rises of New York City to the ocean side views in California. So, it would only make sense for a rooftop bar to pop up in a place as beautiful as the Vail Valley. One Rooftop Bar is the area’s first and it’s now open.
One Rooftop Bar is located on the top level of the easternmost building in Riverfront Village, a development in Avon that surrounds the Westin Riverfront Resort and Spa. That vantage point affords great views of Beaver Creek, Game Creek Bowl in Vail and the Eagle River.
“The rooftop strikes the perfect balance between sophistication and comfort, fostering a strong sense of belong for both locals and travelers,” said Mathew Hallas, lead bartender at One Rooftop Bar. “With unmatched views, a well-designed aesthetic and a welcoming team, we set just the right energy for a vibrant social atmosphere.”
Also setting the right energy are the hand-crafted cocktails you’ll find on the menu. Unique presentations such as the Double Diamond Martini, the Shooting Star Spritz and the Bear Paw Bramble are just a taste of the playful surprises you’ll find.
“We worked hard to create a unique menu of interesting cocktails for people to sip on while enjoying our fantastic views,” Hallas said. “We are excited to welcome both locals and visitors to this new year-round destination.”

Many of the drinks are named after trails on Beaver Creek Mountain and some have an artistic flair that is Instagram-worthy. Get your camera ready for when the Birds of Prey drink is brought to your table. Once the server lifts the glass cloche, a smoke-like fog spreads from underneath and reveals what looks like an ostrich egg in a nest. It’s all theatrics and the cracked egg vessel holds orange Muscat wine, cognac, agave, orange bitters, pine aroma and egg. It’s a fun and delicious way to toast to new views and new experiences that will happen here.
“Our understated bar program champions innovation, offering unique presentations and playful surprises. From glogg in the winter to citrus rhubarb spritzes in the summer, alongside botanical house infusions, our cocktails are driven by premium ingredients and creativity,” Hallas said.
The culinary program at One Rooftop Bar revolves around simple, pure food, prioritizing locally and ethically sourced ingredients whenever possible. Led by executive chef Angel Munoz, Jr., the dishes are designed for grazing and sharing with friends after a day on the slopes. Try the Humboldt fog and sourdough baguette with fig smear, pickled onions, arugula and dill with one of their Colorado microbrews or the raclette and sage dumplings with a French white off of the wines by the glass menu.
The space fits about 60 people and there’s not a bad view in the house with 40 table seats, 18 window seats and six bar stools if you want to belly up and watch Hallas and the other bartenders create the magic.
One Rooftop Bar will be open daily from 3 p.m. to 9 p.m. Reservations are highly recommended and are available up to 30 days in advance. “We are excited to invite and connect with the locals in the off-season and will offer a discount just for them,” Hallas said. “We recognize the importance of welcoming in our neighbors and people living in the community all year round and look forward to them experiencing what we’ve created.”
